No-bake summer cheesecake

When temperatures rise and the oven is put aside, this cheesecake is a real lifesaver. Perfect for summer – light and stunning in appearance. Check out the recipe below and see how easy it is to conjure up something delicious without baking!

You only need a few ingredients to make it! It’s delicious, quick and creamy 🙂

A crispy cookie crust, velvety cheese filling, Stovit fruit in gel, and white chocolate glaze… it’s a masterful combination of flavors! 🍒

Ingredients:

22 cm diameter cake pan

Crust:

200 g cookies

100 g butter

Cheese filling:

500 g cream cheese from a tub

250 g mascarpone cheese

300 ml 30% cream

90 g powdered sugar

2 teaspoons gelatin + 30 ml hot water

250 g cherry-flavored fruit in gel @stovit_pl

Topping:

100 g white chocolate

50 ml 30% cream

1. Crush the cookies and mix with melted butter. Transfer to the bottom of the pan, press down and refrigerate for 10 minutes.

2. Pour hot water over the gelatin and stir to remove any lumps.

3. Put the cheesecake curd into a bowl, add the mascarpone, cream, and powdered sugar. Beat until stiff, then add the cooled gelatin. Mix.

4. Spread the cheese mixture over the cookies, smooth it out, and refrigerate for 15 minutes.

5. Spread the Stovit fruit in gel on top of the cheese mixture.

6. Heat the cream in a small pot, add the white chocolate and mix until a glaze forms.

7. Decorate the cake with the glaze and chill for several hours in the refrigerator.
